SPAIN – Mandecados Polvorones Recipe

These are Tracy’s favorite Christmas Cookies because:

Mandecados and polvorones come from Spain and are served at Christmas time. There are different varieties of these cookies, some flavored with lemon, chocolate, coconut, or other flavors. The most common, however, are the original mantecados, and the polvorones which are served sprinkled with powdered sugar.

These cookies are completely different from most cookies you’re used to eating. They have a crumbly, yet smooth and velvety texture unlike most cookies that tend to be hard and cripsy. They are made toasted flour, almonds, cinnamon, and lard, which gives them their unique, characteristic flavor. I don’t make cookies very often, but love to make these every year for Christmas to serve with my homemade turrón.

These are Markus’s (second) favorite Christmas Cookies because:

While Vanillekipferl are my absolute favorite Christmas cookie, these hazelnut meringue cookies give them a run for their money. A recipe which was passed down from my great-grandmother, these cookies are gluten-free and require only three ingredients. Egg whites, sugar, and ground hazelnuts. My mother always made these cookies to be eaten in tye afternoon with tea, and they really are best eaten fresh as the ‘meringue’ absorbs moisture from the air after a day or two. When served freshly baked, they are sweet, crispy and at the same time light and airy. A great Christmas cookie to try if you are gluten-free or want to add a new cookie to your baking repertoire!

These are Shashi’s  (second) favorite Christmas Cookies because:

Well, my parents used to make a traditional Sri Lankan Christmas Cake when I was younger – the elaborate process of chopping dried fruits, mixing them with alcohol and jams and letting it ferment would go on for days. During those days, and even after the cake was eventually baked, our house smelled wonderful – a smell I associate with Christmas. However, in 2014 my dad passed away and we set aside our traditional Christmas cake as it was just to painful to make it without him. Last year though, I resuscitated the recipe in the form of these cupcakes.
